Introduction:

Chhath Puja, a four-day Hindu festival dedicated to the worship of the Sun God, holds a special place in the hearts of people in the Indian states of Bihar, Jharkhand, Uttar Pradesh and parts of Nepal. Rooted in ancient traditions, Chhath Puja is not only a time for spiritual reflection but also a celebration of culinary delights that are an integral part of the festivities.

Day 1: Nahay Khay (The Bath and Feast):

Chhath Puja commences with Nahay Khay, a day that begins with devotees taking a holy dip in rivers, ponds, or other water bodies before sunrise. This ritual purification symbolizes the cleansing of the body and soul. Following the dip, a special meal known as “Nahay Khay” is consumed. This meal is characterized by its simplicity and purity, aligning with the satvik principles of Hinduism. Kheer, a sweet rice pudding, is a common dish on this day, along with puris (fried bread) and an assortment of fresh fruits.

The emphasis on cleanliness and simplicity in Nahay Khay signifies the start of a spiritually charged festival, preparing devotees for the days of fasting and devotion that lie ahead.

Day 2: Kharna (The Fasting Day Feast):

Baklava, a dessert as rich in history as it is in flavour, has been enchanting taste buds for centuries. With its layers of phyllo dough, nuts, and sweet syrup, this delectable treat has become a beloved dessert around the world. Today, we embark on a culinary journey to explore the origins, ingredients, and the irresistible charm of baklava.

A Sweet History

Baklava’s roots can be traced back to ancient Mesopotamia, where a similar pastry called “Layla” was enjoyed. Over the centuries, this sweet delight travelled through the Middle East and Mediterranean regions, adapting to local tastes and ingredients along the way. Its name itself is believed to have been derived from the Mongolian word for “to tie” or “to wrap,” which is quite fitting given the layers and layers of pastry that make up this dessert.

Ingredients That Create Magic

At the heart of baklava’s allure is its simple yet harmonious combination of ingredients:

Phyllo Dough: Thin, delicate sheets of phyllo dough are essential to baklava’s texture. When baked, they become wonderfully crisp and flaky.

Nuts: A mixture of finely chopped nuts, often including walnuts, pistachios, or almonds, adds a rich, nutty flavour and a satisfying crunch to each bite.

Spices: Cinnamon is a common spice used to infuse the layers with warmth and depth of flavour.

Sweet Syrup: A fragrant mixture of sugar, water, and a touch of lemon juice is poured over the baked layers, infusing the dessert with sweetness and moisture.

Baklava Recipe

Ingredients:

400 grams of phyllo dough, thawed

2 cups of mixed nuts (e.g., walnuts, pistachios), finely chopped

1 teaspoon ground cinnamon

1 cup unsalted butter, melted

1 cup granulated sugar

1 cup water

1/2 cup honey

1 teaspoon vanilla extract

Zest of one lemon

Instructions:

  1. Preheat your oven to 325°F (160°C) and butter a 9×13-inch baking dish.
  2. In a bowl, mix the chopped nuts and ground cinnamon together.
  3. Unroll the phyllo dough carefully and place it between two slightly damp kitchen towels to prevent drying.
  4. Start by placing one sheet of phyllo dough in the prepared dish. Brush it generously with melted butter. Repeat this process, layering and buttering each sheet until you’ve used about half of the phyllo sheets.
  5. Sprinkle a layer of the nut mixture evenly over the buttered phyllo layers.
  6. Continue layering the remaining phyllo sheets on top of the nut mixture, generously brushing each layer with melted butter.
  7. Using a knife, cut the baklava into square shapes.
  8. Bake in the preheated oven for about 50-60 minutes or until the baklava is golden brown and crisp.
  9. While it bakes, make the syrup: Combine sugar, water, honey, lemon zest, and vanilla extract in a saucepan. Boil it, then reduce heat and simmer for about 05 minutes.
  10. Once the baklava is out of the oven, immediately pour the hot syrup evenly over the hot pastry. Allow it to cool completely, absorbing the syrup.
  11. Let the baklava sit for a few hours or overnight to allow the flavours to meld and the syrup to penetrate the layers.
  12. Serve and enjoy your baklava.

There are different types of meal serving to the guests at different times of the day by the Hotel Industry. Every meal, have their own importance and a different set of Food & Beverage items for e.g. Breakfast includes fresh fruit juices, but lunch or dinner includes different kind of soups etc.

Breakfast : Breakfast is the first meal of the day. Breakfast means break the fast after a long sleep. It’s generally considered between 6:00 am – 10:30 am. It consists of nutritional dishes which are healthy and give required nutrients to our body. Breakfast consists of fresh fruits juices, fresh cut fruits, different kind of egg dishes, cereals, Bakery items, smoothies, milkshakes and so on.

 Lunch : Lunch is the first heavy meal of the day. Lunch have its different timings and different menu selection as it consists heavy meals like soups, appetizers, snacks, main course gravy dishes, desserts, tea & coffee. Lunch generally happens in between 12:00 pm – 3:00 pm.

Brunch : Brunch is a combination of breakfast & lunch basically providing to those guests who wake up late and miss their breakfast but at the same time we need to serve Lunch to other guests so for the convenience of both type guests we are serving brunch . Brunch consists of dishes from breakfast as well as from lunch. Brunch timings are 11:00 am -3:30 pm.

High Tea : Basically in the evening tune between 4:00 pm-6:00 pm before dinner high Tea is provided to guests in the form of a evening tea & coffee with some light snacks , Bakery items, pastries etc.

Dinner : The menu of the dinner is similar to lunch but the only difference is the timings because dinner generally happens from 7:00 pm-12:00 pm. And dinner menu is elaborate then the lunch menu because in evening time guests have more time to spend and even they want to try different kind of alcoholic drinks with their food as well.

Supper :  It’s a late night dinner. Providing to those guests who miss their dinner generally in between 12:00 am – 4:00 am. It’s a light snack with Tea & Coffee for e.g. sandwich, burgers, cookies, Bakery items with tea & coffee etc.

It is a major department of any hotel establishment which is responsible to provide the food & beverages to the guests in different areas or sections of food & beverage service department. It is the second largest revenue-generating department of the hotel as it sells food & beverages to the guests in their rooms, in restaurants, in bars, in banquets and so on.

There are different sections in this department which have their different designs, different work procedure and different brigade of food & beverage service staff.

Subsections in F & B Service Department

Bar: It is a subsection of food & beverage service department where guests can have every type of alcoholic & non alcoholic drinks like all kinds of cocktails, mocktails, juices, aerated drinks and so on. Bar even serves light snacks with the drinks.

Restaurant: A dining hall where guests can get their food and beverage orders served on their respective tables by wait staff. Guests can also have alcoholic drinks with their meals if the restaurant has the licence to serve alcohol. The  Restaurant can serve different kind of meals during different times of the day like breakfast in the morning, lunch in the day, high tea in the evening, dinner in night and so on.

Banquet: Banquet is the largest revenue-generating section of food & beverage service department as it sells the food & beverages in bulk to the large number of guests accommodate at the same time. Basically banquets are responsible to cater all kinds of functions & events like marriage party, cocktail dinner, conference meetings, conferences, etc. Mostly banquets serve buffet service to the guests, where all the food dishes are kept inside the charging dishes on the buffet tables and guests can serve themselves.

Room service: It is also an important section of food & beverage service department which is responsible to provide Food & Beverages service to the guests in their respective rooms. Here,  guests have a menu card in each room. Guests read the menu card and directly call room service where the room service order taker take the food order and punch it in the point of sale system. After punching the kitchen staff will receive a kitchen order ticket on behalf of that they will prepare that particular order and wait staff will pick up the food from the kitchen and serve the food to the concerned room.
